Spinach and Feta Grilled Cheese
Ingredients:

2 slices of your favorite bread (sourdough, whole wheat, or white)
2 tbsp unsalted butter (for grilling)
1/4 cup fresh spinach leaves, roughly chopped (or a handful of baby spinach)
2 oz feta cheese, crumbled
1 slice of mozzarella cheese (or provolone, if you prefer)
1/4 tsp garlic powder (optional, for extra flavor)
1/4 tsp onion powder (optional, for extra depth)
Salt and pepper, to taste
Instructions:
Prepare the Filling:

In a small bowl, combine the crumbled feta cheese, chopped spinach, garlic powder, onion powder, salt, and pepper. Stir until the mixture is well combined and evenly distributed.
Butter the Bread:

Spread a thin layer of butter on one side of each slice of bread. This will give the sandwich a nice golden, crispy exterior when grilled.
Assemble the Sandwich:

On the unbuttered side of one slice of bread, add a layer of mozzarella cheese (or provolone).
Spoon the spinach and feta mixture on top of the cheese, spreading it evenly.
Top with the second slice of bread, buttered side up.
Grill the Sandwich:

Heat a skillet or griddle over medium heat.
Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
Press down gently with a spatula while grilling to ensure the sandwich holds together and cooks evenly.
Serve:

Once both sides are golden and crispy, remove the sandwich from the skillet. Let it cool for a minute before cutting it in half.
Serve with a side of tomato soup or a salad for a well-rounded meal!
