Crispy Mashed Potato Fries

Ingredients:

3 cups leftover mashed potatoes (chilled or freshly made)
1/4 cup all-purpose flour
1 large egg
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
1/4 cup chopped fresh parsley (optional, for garnish)
1/2 cup breadcrumbs (preferably panko for extra crunch)
2 tbsp olive oil (for drizzling or spraying)
📝 Instructions:

Prepare the mashed potato mixture:

If using leftover mashed potatoes, make sure they’re well-chilled. If making fresh mashed potatoes, let them cool to room temperature, then refrigerate until cool.
In a large bowl, combine the mashed potatoes, egg, flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Shape the fries:

Line a baking sheet with parchment paper or a silicone baking mat. Lightly grease it with olive oil or non-stick spray.
Using your hands or a spoon, form the mashed potato mixture into "fries" or rectangular sticks (about 3-4 inches long and 1 inch wide). You should be able to make 12-15 fries, depending on the size.
Coat with breadcrumbs:

In a shallow bowl, place the breadcrumbs. Gently roll each mashed potato fry in the breadcrumbs, pressing lightly to coat evenly. For extra crunch, use panko breadcrumbs.
Bake the fries:

Preheat your oven to 425°F (220°C). Place the coated fries on the prepared baking sheet, making sure they’re not touching each other.
Drizzle or spray a light coat of olive oil over the fries to help them crisp up in the oven.
Bake for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy on the outside.
Serve:

Once baked, remove the fries from the oven and sprinkle with chopped parsley for a fresh touch (optional).
Serve with your favorite dipping sauce, like ketchup, ranch, or garlic aioli.
