Strawberry Jam & Coconut Milk Ice Cream

Ingredients:
- 1 cup strawberry jam (preferably homemade or natural)
- 2 cans (14 oz each) full-fat coconut milk
- 1/2 cup sugar (optional, based on the sweetness of your jam)
- 1 tsp vanilla extract
- 1/4 tsp salt

Directions:
1. Mix the Base: In a medium bowl, combine the coconut milk, strawberry jam, sugar (if using), vanilla extract, and salt. Stir well until everything is fully blended.
2. Chill: Place the mixture in the fridge for at least 2 hours, or until completely chilled. This helps the ice cream churn better.
3. Churn: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.
4. Freeze: Once the ice cream is churned, transfer it to a freezer-safe container. Press a piece of plastic wrap directly onto the surface to prevent ice crystals from forming. Freeze for 4-6 hours or until firm.
5. Serve: Scoop out the ice cream and enjoy! You can add fresh fruit, a drizzle of extra strawberry jam, or a sprinkle of shredded coconut on top for extra flavor.
