Chickpea and Feta Fritters with Zucchini

Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup grated zucchini (about 1 medium zucchini)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup chopped green onion
- 1 egg
- 1/4 cup chickpea flour (besan)
- 1/4 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil for frying

Directions:
1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
2. Add the grated zucchini, feta cheese, mint, green onion, egg, chickpea flour, cumin, smoked paprika, salt, and black pepper to the bowl. Mix well until everything is combined.
3. Heat a large skillet over medium heat and add enough olive oil to coat the bottom of the pan.
4. Drop spoonfuls of the chickpea mixture into the hot oil, flattening them slightly with the back of the spoon.
5. Cook for 3-4 minutes on each side or until golden brown and crispy.
6. Remove the fritters from the skillet and drain on paper towels. Serve warm.
