Elvis Presley Cake (Jailhouse Rock Cake)
Ingredients:
For the Cake:
1 box yellow cake mix (or homemade vanilla cake recipe)
3 ripe bananas, mashed
3 eggs
1/2 cup vegetable oil
1/2 cup water
1 teaspoon vanilla extract
For the Peanut Butter Frosting:
1/2 cup creamy peanut butter
8 oz cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
1/4 cup milk (more if needed to adjust consistency)
For the Topping:
1/2 cup chopped pecans (or walnuts, optional)
1/4 cup mini chocolate chips (optional, for extra Elvis flair)
Instructions:
1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
In a large bowl, mix the cake mix, mashed bananas, eggs, vegetable oil, water, and vanilla extract. Beat with an electric mixer until smooth and well combined (about 2-3 minutes).
Pour the batter into the prepared baking dish and smooth the top.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
2. Make the Peanut Butter Frosting:
In a medium bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.
Gradually add the powdered sugar, vanilla extract, and milk. Beat until the frosting is fluffy and spreadable. You can add more milk if you need to thin the frosting to your desired consistency.
3. Assemble the Cake:
Once the cake has cooled, spread a generous layer of peanut butter frosting evenly over the top.
Sprinkle the chopped pecans (or walnuts) and mini chocolate chips over the frosting for an extra touch of flavor and texture.
