Ingredients:

2 salmon fillets
250g Jersey Royal potatoes (or your favorite potatoes)
A small bunch of fresh dill
A small bunch of fresh parsley
1 large lemon (zested and juiced)
2-3 tbsp olive oil
1-2 tsp capers, crushed
8 (ish) asparagus spears
Salt & pepper to taste
Knob of butter
Instructions:

Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Potatoes:
Boil the Jersey Royal potatoes in salted water until tender. Drain and set aside.
Make the Herb Mixture:
In a bowl, combine the chopped fresh dill, parsley, lemon zest, olive oil, crushed capers, salt, and pepper. Mix well to create a flavorful herb dressing.
Prepare the Salmon:
Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the herb mixture over the salmon, ensuring they are well coated. Squeeze some lemon juice on top for extra flavor.
Add Asparagus:
Arrange the asparagus spears around the salmon on the baking sheet. Drizzle with a little olive oil and season with salt and pepper.
Bake:
Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender but still crisp.
Serve:
Serve the baked salmon with the boiled potatoes and asparagus. Add a knob of butter on top of the potatoes for extra richness, and garnish with additional fresh herbs if desired.
