Thai Peanut Chicken Bowls with Grilled Zucchini Recipe

Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup soy sauce
2 tbsp honey
2 tbsp rice vinegar
1 tbsp sesame oil
1 tsp minced garlic
1/2 tsp grated ginger
1/4 tsp red pepper flakes (optional)
For the Zucchini:
2 medium zucchini, sliced lengthwise
2 tbsp olive oil
Salt and pepper, to taste
For the Peanut Sauce:
1/3 cup creamy peanut butter
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp honey
1 tbsp sesame oil
1 tsp grated ginger
1/4 tsp red pepper flakes (optional)
1/4 cup water
For the Bowls:
Cooked rice or quinoa
Chopped cilantro
Sesame seeds, for garnish
Instructions:
Marinate the Chicken:
In a bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
Add the chicken cubes to the marinade, mix well, and let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
Prepare the Zucchini:
Preheat a grill or grill pan over medium heat.
Brush the zucchini slices with olive oil and season with salt and pepper.
Grill the zucchini for about 3-4 minutes on each side, or until tender and grill marks appear. Remove from the grill and set aside.
Cook the Chicken:
In a large skillet over medium-high heat, add the marinated chicken (discard any leftover marinade).
Cook the chicken for about 6-8 minutes, stirring occasionally, until cooked through and no longer pink in the center. The internal temperature should reach 165°F (75°C).
Make the Peanut Sauce:
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, red pepper flakes (if using), and water until smooth. Adjust the consistency with more water if needed.
Assemble the Bowls:
In serving bowls, start with a base of cooked rice or quinoa.
Top with the grilled zucchini and cooked chicken.
Drizzle the peanut sauce over the top.
Garnish:
Sprinkle with chopped cilantro and sesame seeds for garnish.
Serve:
