Ingredients:

For the Beef Chops:

4 boneless beef chops
3 tbsp butter
4 cloves garlic, minced
1 tbsp olive oil
1/2 tsp dried thyme
Salt and pepper to taste
For the Mashed Potatoes:

4 large potatoes, peeled and chopped
1/2 cup heavy cream
2 tbsp butter (for mashed potatoes)
1/4 cup grated Parmesan cheese
Instructions:

Prepare the Mashed Potatoes:
In a large pot, bring salted water to a boil. Add the chopped potatoes and cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the heavy cream, 2 tbsp butter, and grated Parmesan cheese. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
Cook the Beef Chops:
While the potatoes are cooking, season the beef chops with salt, pepper, and dried thyme.
In a large skillet, heat the olive oil over medium-high heat. Add the beef chops and sear for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove the chops from the skillet and let them rest.
Make the Garlic Butter Sauce:
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).
Return the beef chops to the skillet, spooning the garlic butter over them for added flavor.
Serve:
Plate the smooth mashed potatoes and top with the buttery garlic beef chops. Drizzle any remaining garlic butter sauce over the top.
