Ingredients:

For the Shortcake:

2 cups (250g) all-purpose flour
1 tbsp baking powder
½ tsp salt
3 tbsp granulated sugar
6 tbsp (85g) cold unsalted butter, cubed
¾ cup (180ml) whole milk
1 tsp vanilla extract
For the Fruit Filling:

2 cups (300g) fresh strawberries, hulled and sliced
2 cups (300g) fresh pineapple, finely chopped
¼ cup (50g) granulated sugar (adjust to taste)
1 tbsp fresh lime juice
For the Whipped Cream:

1½ cups (360ml) heavy whipping cream
3 tbsp powdered sugar
1 tsp vanilla extract
Instructions:

Prepare the Shortcake:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
In a separate bowl, combine the whole milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a 1-inch thick rectangle. Cut out shortcakes using a round cutter or a glass and place them on the prepared baking sheet.
Bake for 12-15 minutes, or until the tops are lightly golden. Remove from the oven and let cool.
Prepare the Fruit Filling:
In a medium bowl, combine the sliced strawberries, chopped pineapple, granulated sugar, and lime juice. Toss gently to combine and let it sit for about 15-20 minutes to allow the juices to develop.
Make the Whipped Cream:
In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.
Assemble the Shortcake:
Slice the cooled shortcakes in half horizontally. Spoon a generous amount of the fruit filling onto the bottom half of each shortcake. Top with a dollop of whipped cream, then place the top half of the shortcake on top.
Serve:
Serve immediately and enjoy the tropical flavors of this delicious dessert!
