Ingredients:

For the Shrimp:

1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Chickpeas:

1 (15-ounce) can chickpeas, drained and rinsed
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Creamy Feta Sauce:

1/2 cup crumbled feta cheese
1/4 cup Greek yogurt
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:

Prepare the Chickpeas:
Preheat your oven to 400°F (200°C).
In a bowl, toss the drained and rinsed chickpeas with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer.
Roast in the oven for about 20-25 minutes, or until crispy and golden, shaking the pan halfway through.
Grill the Shrimp:
While the chickpeas are roasting, prepare the shrimp. In a bowl, combine the shrimp with olive oil, garlic powder, onion powder, salt, and black pepper. Toss to coat.
Preheat a grill or grill pan over medium-high heat. Grill the shrimp for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.
Make the Creamy Feta Sauce:
In a small bowl, combine the crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, salt, and black pepper. Mix until smooth and creamy.
Assemble the Bowl:
In a serving bowl, layer the grilled shrimp, roasted chickpeas, and drizzle with the creamy feta sauce. You can also add your choice of greens, grains, or additional veggies for a complete meal.
