Ingredients:

1 pound ground beef
2 cups tomatoes, chopped (fresh or canned)
1 medium onion, finely chopped
3 cloves garlic, minced
Salt and pepper, to taste
2 tablespoons olive oil
Handful of fresh parsley, chopped
Handful of fresh mint leaves, chopped
1/4 cup dried apricots, chopped
1 cup vegetable broth
1 tablespoon lemon juice
Instructions:

Cook the Ground Beef:
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until the onion is translucent.
Add the Beef:
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
Incorporate the Vegetables:
Stir in the chopped tomatoes and dried apricots. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld together.
Finish with Fresh Herbs:
Remove the skillet from heat and stir in the chopped parsley, mint leaves, and lemon juice. Adjust seasoning if needed.
Serve:
Serve the Mediterranean Ground Beef Stir Fry warm, either on its own or over rice, couscous, or quinoa for a complete meal.
