Ingredients:
2 English cucumbers, thinly sliced
1 shallot, thinly sliced
1 cup seasoned rice vinegar
2 tablespoons sugar
1 tablespoon grated ginger
1 teaspoon sea salt
1 teaspoon dried red chile flakes
2 tablespoons soy sauce
Instructions:
Prepare the Cucumbers:
In a large bowl, combine the thinly sliced cucumbers and shallots.
Make the Pickling Liquid:
In a separate bowl, whisk together the seasoned rice vinegar, sugar, grated ginger, sea salt, dried red chile flakes, and soy sauce until the sugar and salt are dissolved.
Combine:
Pour the pickling liquid over the cucumber and shallot mixture. Toss gently to ensure all the cucumbers are well coated.
Marinate:
Let the cucumbers marinate for at least 30 minutes at room temperature, or refrigerate for a few hours for more intense flavor.
