🍗 Grilled Chicken Bowl with Mashed Potatoes & Black Beans 🥔

Ingredients:
For the Chicken:

2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Mashed Potatoes:

2 large potatoes, peeled and cubed
1/4 cup milk
2 tablespoons butter
Salt and pepper to taste
For the Bowl:

1 (15 oz) can black beans, rinsed and drained
Chopped chives, for garnish
Instructions:
Prepare the Chicken:
In a small bowl, mix together olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
Rub the mixture all over the chicken breasts. Let them marinate for at least 15 minutes.
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.
Make the Mashed Potatoes:
While the chicken is grilling, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
Assemble the Bowl:
In a serving bowl, add a generous scoop of mashed potatoes. Top with sliced grilled chicken and a portion of black beans.
Garnish and Serve:
Sprinkle chopped chives on top for garnish. Enjoy your delicious grilled chicken bowl warm!
