🌍 Mediterranean Chicken Bowl with Tahini Sauce & Fresh Salsa 🍗

Ingredients:
For the Chicken:

2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Salad:

1 cup chopped romaine lettuce
1/2 cucumber, chopped
1/4 red onion, thinly sliced
1 tomato, diced
For the Salsa:

1/2 cup diced tomatoes
1/4 red onion, finely chopped
2 tablespoons chopped cilantro
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Salt to taste
For the Tahini Sauce:

1/4 cup tahini
1 tablespoon lemon juice
1 clove garlic, minced
1/4 cup water
Salt and pepper to taste
Instructions:
Prepare the Chicken:
In a bowl, combine the chicken cubes with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Toss to coat the chicken evenly.
Heat a skillet over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes, or until fully cooked and golden brown. Remove from heat.
Make the Salsa:
In a bowl, combine diced tomatoes, finely chopped red onion, chopped cilantro, minced jalapeño (if using), lime juice, and salt. Mix well and set aside.
Prepare the Tahini Sauce:
In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth. Adjust the consistency with more water if needed. Season with salt and pepper to taste.
Assemble the Bowl:
In a serving bowl, layer the chopped romaine lettuce, cucumber, sliced red onion, and diced tomato. Top with the cooked chicken and fresh salsa.
Drizzle with Tahini Sauce:
Finish by drizzling the tahini sauce over the top.
