Ingredients:
For the Chicken:

4 chicken thighs (bone-in or boneless, skinless)
1/4 cup buffalo sauce
For the Spice Rub:

1 teaspoon salt
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper (adjust to taste)
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Spice Rub:
In a small bowl, combine the salt, chili powder, smoked paprika, baking powder, garlic powder, onion powder, black pepper, and cayenne pepper. Mix well.
Season the Chicken:
Pat the chicken thighs dry with paper towels. This helps the skin get crispy.
Rub the spice mixture all over the chicken thighs, ensuring they are evenly coated.
Bake the Chicken:
Place the seasoned chicken thighs on a baking sheet lined with parchment paper or in a baking dish.
Bake in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
Add Buffalo Sauce:
Remove the chicken from the oven and brush the buffalo sauce over the thighs, coating them well.
Return the chicken to the oven and bake for an additional 5-10 minutes to allow the sauce to set.
Serve:
Once done, remove from the oven and let rest for a few minutes. Serve hot with your favorite sides, such as celery sticks, carrots, or a cooling ranch or blue cheese dressing.
