🥗 Nourishing Quinoa and Lentil Salad 🌱

Ingredients:

1 cup quinoa
1 cup green lentils
1 cucumber, diced
1 red bell pepper, diced
1 medium carrot, grated
2 tablespoons olive oil
Juice of 1 lemon
1 garlic clove, minced
Salt and pepper to taste
Fresh parsley, chopped
Instructions:

Cook the Quinoa:
Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
Cook the Lentils:
In another saucepan, combine 1 cup of green lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess water and let them cool.
Prepare the Vegetables:
In a large bowl, combine the diced cucumber, diced red bell pepper, and grated carrot.
Make the Dressing:
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
Combine Everything:
Add the cooked quinoa and lentils to the bowl with the vegetables. Pour the dressing over the salad and toss gently to combine.
Garnish:
Sprinkle with chopped fresh parsley for added flavor and color.
Serve:
