Pesto Pasta with Grilled Veggies & Mozzarella
Ingredients:
For the Pasta:
1 pound penne pasta
1/2 cup pesto sauce
For the Grilled Vegetables:
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, sliced
1 red bell pepper, sliced
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Topping:
1/2 cup shredded mozzarella cheese
Balsamic glaze (optional)
Instructions:
Cook the Pasta:
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Grill the Vegetables:
Preheat your grill or grill pan over medium heat.
In a bowl, toss the sliced zucchini, yellow squash, red onion, and red bell pepper with olive oil, paprika, garlic powder, salt, and black pepper.
Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
Combine:
In a large mixing bowl, combine the cooked pasta and pesto sauce, tossing until the pasta is well coated.
Add the grilled vegetables and mix gently.
Serve:
Plate the pasta and top with shredded mozzarella cheese. Drizzle with balsamic glaze if desired for an extra touch of flavor.
