Ingredients:

4 large sweet potatoes (about 2 lbs), peeled and cubed

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

2 large eggs

1/2 cup packed brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans (lightly toasted, optional for extra flavor)

Instructions:
Step 1: Prepare the Sweet Potatoes
Cook the Sweet Potatoes: Place the peeled and cubed sweet potatoes in a large pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the sweet potatoes are fork-tender.
