Blue Cheese and Pear Tartlets Recipe
Ingredients:
For the Tartlet Shells:
1 sheet of puff pastry (store-bought or homemade), thawed
1 tablespoon olive oil (for greasing)
Flour (for rolling out the dough)
For the Filling:
2 medium ripe pears, peeled, cored, and sliced thinly
1/2 cup crumbled blue cheese (such as Roquefort or Gorgonzola)
2 tablespoons honey
1 tablespoon balsamic vinegar
1/4 cup heavy cream (or crème fraîche for a richer flavor)
1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
Salt and pepper, to taste
1 egg (for egg wash)
Fresh parsley or arugula (for garnish, optional)
Instructions:
Step 1: Prepare the Tartlet Shells
Preheat Oven: Preheat your oven to 375°F (190°C).

Roll Out Puff Pastry: On a lightly floured surface, roll out the puff pastry to about 1/8 inch thickness. Cut out circles (about 3 inches in diameter) using a cookie cutter, the rim of a glass, or a tartlet pan.

Grease Tartlet Pan: If using a tartlet pan or muffin tin, lightly grease each compartment with olive oil or butter. Gently press the puff pastry circles into the bottom of the pan, ensuring the edges line the sides of the pan.

Prick the Dough: Use a fork to prick the bottom of each tart shell several times to prevent puffing during baking.

Chill: Place the tartlet shells in the fridge while you prepare the filling (this will help them maintain their shape when baking).

Step 2: Prepare the Filling
Slice Pears: Thinly slice the pears lengthwise into half-moons. You can use a mandoline slicer for even slices if you have one.

Caramelize the Pears: In a small skillet, heat the balsamic vinegar and honey over medium heat. Once it begins to simmer, add the pear slices and cook for 2-3 minutes, until they soften slightly and the vinegar and honey have formed a syrupy glaze. Set aside to cool.

Mix the Cream Cheese Filling: In a small bowl, combine the crumbled blue cheese, heavy cream (or crème fraîche), thyme, salt, and pepper. Stir together until the mixture is smooth and well combined.

Step 3: Assemble the Tartlets
Fill the Tart Shells: Take the tartlet shells from the fridge and spoon a generous dollop of the blue cheese mixture into the center of each shell. Spread it out evenly but leave a small border around the edges.

Add the Pears: Arrange the caramelized pear slices on top of the blue cheese mixture in a circular pattern, slightly overlapping the slices.

Egg Wash: Beat the egg in a small bowl and lightly brush the edges of the puff pastry with the egg wash. This will give the tartlets a golden, glossy finish.

Step 4: Bake the Tartlets
Bake: Place the tartlets in the preheated oven and bake for 18-22 minutes, or until the puff pastry is golden brown and crisp, and the filling is bubbly.

Cool: Let the tartlets cool for a few minutes before removing them from the pan. If you're using a muffin tin or tartlet pan, carefully remove the tartlets from the tin by gently running a knife along the edges.

Step 5: Garnish and Serve
Garnish: Just before serving, sprinkle with a little fresh thyme or chopped parsley for a burst of color and fresh flavor. You can also top with a few arugula leaves for extra freshness and a peppery contrast to the sweetness of the pears and richness of the blue cheese.

Serve: Serve these tartlets warm or at room temperature. They’re perfect for a holiday party, as a starter for a dinner, or even as a savory snack with a glass of white wine.
