BBQ Chicken Grilled Cheese
Ingredients:
2 cups cooked chicken breast, shredded (leftover rotisserie chicken works great)
1/2 cup BBQ sauce (your favorite kind)
4 slices of bread (sourdough, white, or whole wheat)
4 slices of cheddar cheese (or a mix of cheddar and mozzarella for extra gooeyness)
2 tbsp unsalted butter, softened
1 tbsp olive oil (optional, for extra crispiness)
1 small red onion, thinly sliced (optional, for extra flavor)
1/2 cup cooked bacon, crumbled (optional, for a smoky crunch)
Instructions:
Prepare the BBQ Chicken:
In a medium bowl, toss the shredded chicken with BBQ sauce until it’s fully coated. Set aside.
Assemble the Sandwiches:
Lay the slices of bread flat and place 2 slices of cheese on one side of each sandwich.
Evenly distribute the BBQ chicken mixture on top of the cheese slices.
If you’re using red onions or crumbled bacon, add those on top of the chicken.
Top each sandwich with another slice of bread.
Grill the Sandwiches:
Heat a large skillet or griddle over medium heat. Spread 1 tbsp of softened butter on the outside of each slice of bread, or use a small amount of olive oil in the pan for extra crispy texture.
Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted inside. If you like your sandwiches extra crispy, you can cook them a little longer over medium-low heat.
For an even melt, you can cover the skillet with a lid during the grilling process.
Serve:
Once both sides are golden and the cheese has melted, remove the sandwiches from the pan.
Slice in half and serve immediately with extra BBQ sauce or a side of fries or salad!
