Grilled Cod with Roasted Tomatoes & Creamy Dill Sauce
Ingredients:
For the Cod:
2 cod fillets (about 6 oz each)
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional for a kick)
For the Roasted Tomatoes:
1 pint cherry tomatoes
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
For the Creamy Dill Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped dill
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C) for roasting the tomatoes.
Prepare the Roasted Tomatoes:
In a baking dish, toss the cherry tomatoes with olive oil, garlic powder, salt, black pepper, and dried oregano. Roast in the preheated oven for about 15-20 minutes, or until the tomatoes are blistered and juicy.
Prepare the Cod:
While the tomatoes are roasting, brush the cod fillets with olive oil and season with paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
Grill the Cod:
Preheat a grill or grill pan over medium-high heat. Grill the cod fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is cooked through.
Make the Creamy Dill Sauce:
In a small bowl, combine mayonnaise, sour cream, chopped dill, lemon juice, minced garlic, salt, and black pepper. Mix until smooth and well combined.
