Mexican White Trash Casserole
Ingredients:
1 lb ground beef
1 packet taco seasoning
1 can (10 oz) cream of chicken soup
1 can (10 oz) diced tomatoes with green chilies (like Ro-Tel)
1 cup sour cream
2 cups cooked rice (white or brown)
1 cup shredded cheese (cheddar or Mexican blend)
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn (optional)
Salt and pepper to taste
Tortilla chips for topping
Fresh cilantro for garnish (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Meat:
In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat. Stir in the taco seasoning and cook according to package instructions.
Mix the Casserole:
In a large mixing bowl, combine the cooked meat, cream of chicken soup, diced tomatoes, sour cream, cooked rice, shredded cheese, black beans, corn (if using), salt, and pepper. Mix until well combined.
Transfer to Baking Dish:
Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Bake:
Bake in the preheated oven for about 25-30 minutes, or until the casserole is heated through and bubbly.
Add Toppings:
Remove from the oven and top with crushed tortilla chips and additional cheese if desired. Return to the oven for an additional 5-10 minutes until the chips are slightly golden and the cheese is melted.
Serve:
Garnish with fresh cilantro if desired. Serve hot and enjoy this hearty and delicious casserole!
