Grilled Chicken Gyros with Tzatziki 

🌯 Grilled Chicken Gyros with Tzatziki 🍗

Ingredients:
For the Chicken:

2 large chicken breasts, sliced into thin strips
3 tablespoons olive oil
Juice of 1 lemon
3 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Tzatziki Sauce:

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess water
1 garlic clove, minced
1 tablespoon olive oil
Juice of 1/2 lemon
1 tablespoon fresh dill or mint, chopped
Salt and pepper to taste
For the Gyros:

4 pita breads
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1 cup shredded lettuce
1/2 cup feta cheese, crumbled
Instructions:
Marinate the Chicken:
In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, ground cumin, salt, and black pepper. Add the chicken strips and toss to coat. Marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
Make the Tzatziki Sauce:
In a mixing bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out excess water), minced garlic, olive oil, lemon juice, and chopped dill or mint. Season with salt and pepper to taste. Mix well and refrigerate until ready to use.
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken strips for about 5-7 minutes, turning occasionally, until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
Assemble the Gyros:
Warm the pita breads on the grill for about 1 minute on each side.
To assemble, place a few strips of grilled chicken on each pita. Top with cherry tomatoes, red onion, shredded lettuce, and crumbled feta cheese. Drizzle generously with tzatziki sauce.
