🥜 Pistachio French Toast Sticks 🍞

Ingredients:
4 slices of thick bread (such as brioche or challah)
2 large eggs
1/2 cup milk (or your choice of milk)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 cup crushed pistachios (plus extra for garnish)
2 tablespoons sugar (optional, for sweetness)
Butter or oil for cooking
Maple syrup (for serving)
Instructions:
Prepare the Bread:
Cut each slice of bread into 3-4 strips to create French toast sticks.
Make the Egg Mixture:
In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar (if using) until well combined.
Add the Pistachios:
In another shallow dish, place the crushed pistachios. This will be used to coat the French toast sticks.
Coat the Bread:
Dip each bread stick into the egg mixture, ensuring it is fully coated. Allow any excess to drip off, then roll the stick in the crushed pistachios to coat.
Cook the French Toast Sticks:
In a large skillet, heat a little butter or oil over medium heat. Once hot, add the coated French toast sticks in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
Serve:
Remove the French toast sticks from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Serve warm, garnished with extra crushed pistachios and a drizzle of maple syrup.
