🍲 The Best Lasagna Soup Recipe 🍲

Ingredients:

1 Tablespoon Olive Oil
4 Cloves Garlic, minced
1 Red Onion, minced
1 Bell Pepper, minced
1/2 teaspoon Fresh Oregano, chopped
1 Tablespoon Fresh Parsley, chopped
1 1/2 teaspoon Fresh Basil, chopped
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 Pound Ground Beef
32 Ounces Beef Broth
1/2 Cup Ricotta
32 Ounces Marinara Sauce (Rao's is our favorite!)
14 Ounces Fire Roasted Diced Tomatoes
1" Parmesan Rind
2 Cups Lasagna Noodles, broken
1 Cup Mozzarella Cheese, shredded
Garlic Bread, for dipping
Instructions:

Sauté the Vegetables:
In a large pot, heat the olive oil over medium heat. Add the minced garlic, red onion, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
Add Herbs and Ground Beef:
Stir in the fresh oregano, parsley, basil, salt, and pepper. Add the ground beef and cook until browned, breaking it apart with a spoon.
Combine Broth and Sauces:
Pour in the beef broth, marinara sauce, and fire-roasted diced tomatoes. Add the Parmesan rind for extra flavor. Bring to a simmer.
Cook the Noodles:
Add the broken lasagna noodles to the pot and cook according to package instructions until al dente.
Finish with Ricotta and Mozzarella:
Once the noodles are cooked, stir in the ricotta cheese until well combined. Remove from heat and stir in the shredded mozzarella cheese.
Serve:
Ladle the soup into bowls and serve hot with garlic bread for dipping. Enjoy this comforting and hearty dish!
