🍢 Grilled Chicken Skewers with Creamy Peanut Sauce & Cucumber Salad 🥒

Ingredients:

For the Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
For the Peanut Sauce:

1/2 cup peanut butter
1/4 cup soy sauce
1/4 cup rice vinegar
1 tablespoon honey
1 tablespoon sesame oil
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/4 cup water (or more to adjust thickness)
For the Cucumber Salad:

1 cucumber, thinly sliced
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
Salt and pepper to taste
Instructions:

Marinate the Chicken:
In a bowl, combine the soy sauce, honey, sesame oil, garlic powder, salt, black pepper, and red pepper flakes (if using). Add the chicken cubes and toss to coat. Let marinate for at least 30 minutes in the refrigerator.
Prepare the Peanut Sauce:
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, red pepper flakes (if using), and water. Adjust the thickness by adding more water if needed. Set aside.
Prepare the Cucumber Salad:
In a separate bowl, combine the thinly sliced cucumber, rice vinegar, sesame oil, salt, and pepper. Toss to combine and set aside to marinate.
Grill the Chicken Skewers:
Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F (75°C).
Serve:
Remove the skewers from the grill and serve hot with the creamy peanut sauce drizzled on top or on the side for dipping. Serve alongside the cucumber salad for a refreshing crunch!
