Spicy Grilled Shrimp Bowls with Sriracha Mayo
Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional for extra heat)
For the Sriracha Mayo:
1/2 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper
For the Bowls:
2 cups cooked rice
1/4 cup chopped green onions
Instructions:
Marinate the Shrimp:
In a bowl, combine the olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Add the shrimp and toss to coat. Let marinate for about 15-20 minutes.
Prepare the Sriracha Mayo:
In a small bowl, mix together the mayonnaise, sriracha, lemon juice, garlic powder, salt, and black pepper until smooth. Adjust the spice level by adding more sriracha if desired.
Grill the Shrimp:
Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers (if using) and grill for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
Assemble the Bowls:
In serving bowls, layer the cooked rice and top with the grilled shrimp. Drizzle with the sriracha mayo and sprinkle with chopped green onions.
