Breakfast Chili and Eggs 

🍳 Breakfast Chili and Eggs 🌶️

Ingredients:

1 white onion, finely diced
1 poblano or bell pepper, finely diced
2 cloves garlic, minced or grated
1 pound raw turkey breakfast sausage*
1 packet chili seasoning
28 oz can fire roasted crushed tomatoes
3-4 cups beef broth (to desired consistency)
Instructions:

Sauté the Vegetables:
In a large pot or skillet, heat a little oil over medium heat. Add the diced onion and poblano or bell pepper. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
Cook the Sausage:
Add the raw turkey breakfast sausage to the pot. Cook, breaking it apart with a spoon, until browned and cooked through.
Add Seasoning and Tomatoes:
Stir in the chili seasoning and cook for another minute. Then, add the fire roasted crushed tomatoes and mix well.
Add Broth:
Pour in the beef broth, starting with 3 cups. Stir to combine and bring to a simmer. Adjust the consistency by adding more broth if desired. Let it simmer for about 15-20 minutes to allow the flavors to meld.
Serve with Eggs:
In a separate pan, cook eggs to your liking (scrambled, fried, or poached). Serve the breakfast chili in bowls topped with the cooked eggs.
