Monterey Spaghetti

Monterey Spaghetti
Ingredients:
8 ounces spaghetti
2 cups Monterey Jack cheese, shredded
1 cup Parmesan cheese, shredded (divided)
1 cup sour cream
½ cup ricotta cheese
1 large egg
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic powder
10 ounces frozen chopped spinach, thawed and drained
6 ounces crispy fried onions (divided)
Instructions:
Cook the Spaghetti:
In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Mix the Cheese Mixture:
In a large bowl, combine the Monterey Jack cheese, ½ cup of the Parmesan cheese, sour cream, ricotta cheese, egg, salt, pepper, garlic powder, and drained spinach. Mix until well combined.
Combine with Spaghetti:
Add the cooked spaghetti to the cheese mixture and stir until the pasta is evenly coated.
Transfer to Baking Dish:
Pour the spaghetti mixture into a greased 9x13 inch baking dish. Spread it out evenly.
Top with Fried Onions:
Sprinkle the remaining ½ cup of Parmesan cheese and 4 ounces of crispy fried onions over the top.
Bake:
Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.
Serve:
Remove from the oven and let it cool for a few minutes before serving. Enjoy this cheesy and comforting dish!
