Ingredients:
2 tbsp canola oil
3.5 lbs chicken leg quarters (or other cuts of your choice)
2 red bell peppers, thinly sliced
1 yellow onion, thinly sliced
Salt, to taste
1 pint heavy whipping cream
4 chipotle peppers in adobo sauce (adjust to taste)
2 tsp paprika
1 tsp garlic powder
1 tsp sugar
Instructions:
Prepare the Chicken:
Season the chicken leg quarters with salt on both sides.
Sear the Chicken:
In a large skillet or Dutch oven, heat the canola oil over medium-high heat. Add the chicken leg quarters, skin side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the sliced red bell peppers and yellow onion. Sauté for about 5 minutes, or until the vegetables are softened.
Make the Chipotle Sauce:
In a blender, combine the heavy whipping cream, chipotle peppers in adobo sauce, paprika, garlic powder, and sugar. Blend until smooth.
Combine and Cook:
Return the seared chicken to the skillet with the sautéed vegetables. Pour the chipotle cream sauce over the chicken, ensuring it’s well coated.
Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 30-40 minutes, or until the chicken is cooked through and tender.
Serve:
Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Serve the chicken with the creamy chipotle sauce and vegetables over rice, pasta, or with crusty bread.
