1 cup spinach
1 cup kale, chopped
1 Roma tomato, diced
1 cup shiitake mushrooms, sliced
1 cup oyster mushrooms, sliced
1 tablespoon olive oil
Salt and pepper to taste
For the Creamy Vegan Sauce:
1/4 cup vegan butter
1 cup coconut milk
1 tablespoon total seasoning (or to taste)
1/2 cup vegan cheese (shredded or block, cooked down and blended)
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
