🍗 Parmesan Fried Chicken Sandwiches with Basil Aioli 🥪

Servings: 4-6

Ingredients:
For the Basil Aioli:

¾ cup plain Greek yogurt
¼ cup mayo
3 garlic cloves, minced
1 cup fresh basil leaves
¼ cup lemon juice
½ tsp salt
For the Apple Slaw:

¼ red cabbage, thinly sliced
3 large carrots, thinly sliced
1 Honeycrisp apple, thinly sliced
½ cup fresh parsley, chopped
½ cup plain Greek yogurt
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
½ tsp salt
½ tsp black pepper
For the Parmesan Fried Chicken:

4-5 burger buns
2 tbsp butter or olive oil
1 – 1 ½ lb boneless, skinless chicken breasts
1 ½ cups buttermilk
2 cups all-purpose flour
1 cup grated Parmesan cheese
1 tbsp baking powder
1 tbsp Dan’ O Cheesoning (or your favorite seasoning)
3-4 cups olive oil or vegetable oil (for frying)
Instructions:
Make the Basil Aioli:
In a blender or food processor, combine the Greek yogurt, mayo, minced garlic, fresh basil, lemon juice, and salt. Blend until smooth. Adjust seasoning to taste and set aside.
Prepare the Apple Slaw:
In a large bowl, combine the sliced red cabbage, carrots, Honeycrisp apple, and chopped parsley.
In a separate bowl, mix the Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper. Pour the dressing over the slaw and toss to combine. Set aside.
Prepare the Parmesan Fried Chicken:
In a large bowl, soak the chicken breasts in buttermilk for at least 30 minutes (or up to overnight for more flavor).
In another bowl, mix the flour, grated Parmesan, baking powder, and Dan’ O Cheesoning.
Heat the olive oil or vegetable oil in a large skillet over medium-high heat.
Remove the chicken from the buttermilk, allowing excess to drip off, then dredge in the flour mixture, pressing to adhere.
Fry the chicken in batches for about 5-7 minutes per side, or until golden brown and cooked through. Drain on paper towels.
Assemble the Sandwiches:
Lightly toast the burger buns in a skillet with butter or olive oil.
Place a piece of fried chicken on each bun, top with apple slaw, and drizzle with basil aioli.
Serve:
Serve the sandwiches warm and enjoy this delicious combination of flavors!
