Copycat Chick-fil-A Honey Pepper Pimento Chicken Sandwich 

Ingredients:

For the Chicken Sandwich:

2 boneless skinless chicken thighs
2 tablespoons chicken rub or all-purpose BBQ rub
1 tablespoon olive oil
2 brioche buns
8–10 pickled jalapeños
1 cup shredded lettuce
2 tablespoons honey
For the Pimento Cheese:

1 cup shredded cheddar cheese
2 oz jarred pimentos, drained
1/2 cup mayonnaise
4 oz softened cream cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper to taste
Instructions:

Prepare the Pimento Cheese:
In a mixing bowl, combine the shredded cheddar cheese, jarred pimentos, mayonnaise, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined. Set aside.
Season the Chicken:
Rub the chicken thighs with olive oil and season with the chicken rub or BBQ rub.
Cook the Chicken:
Heat a skillet over medium-high heat. Add the seasoned chicken thighs and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown crust. Remove from heat and let rest for a few minutes.
Assemble the Sandwich:
Toast the brioche buns if desired. Spread a generous amount of pimento cheese on the bottom half of each bun. Place a cooked chicken thigh on top, followed by pickled jalapeños and shredded lettuce. Drizzle with honey.
Finish and Serve:
