Ingredients:
For the Chicken:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup soy sauce
2 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon rice vinegar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon turmeric powder
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
20-24 wooden skewers, soaked in water for at least 30 minutes
For the Peanut Coconut Dipping Sauce:
1/2 cup creamy peanut butter (smooth or crunchy, your preference)
1/4 cup coconut milk (full-fat recommended)
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 tablespoon lime juice
1 tablespoon grated fresh ginger
1 clove garlic, minced
1/2 teaspoon sriracha or chili garlic sauce (optional, for spice)
2 tablespoons water (add more if needed to reach desired consistency)
Instructions:
Marinate the Chicken:
In a large bowl, combine the soy sauce, brown sugar, fish sauce, rice vinegar, grated ginger, minced garlic, turmeric powder, ground coriander, and black pepper. Mix well.
Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
