These crispy onion bhajis are a delicious snack or appetizer, perfect for serving with a refreshing coriander dip. Here’s how to make them:

Ingredients:
For the Bhajis:

2 large red onions, thinly sliced
3/4 cup (100g) gram flour (also known as chickpea flour)
1 tsp curry powder
1/2 tsp garam masala
1/2 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp ground turmeric
1/4 tsp chili powder
1 tsp salt
1/2 cup (120ml) water
Oil for frying
For the Coriander Dip:

3/4 cup (40g) chopped fresh coriander (cilantro)
Juice of 1 lime
1/2 inch piece of ginger, peeled
1 garlic clove
1/2 tsp salt
1/2 tsp ground cumin
1 tsp brown sugar
1 green chili (adjust to taste)
1 heaped tbsp coconut yogurt (or regular yogurt)
Instructions:
Prepare the Bhajis:
In a large bowl, combine the sliced red onions with the gram flour, curry powder, garam masala, ground cumin, garlic powder, ground turmeric, chili powder, and salt. Mix well to coat the onions.
Gradually add the water, mixing until you have a thick batter that coats the onions. Let the mixture sit for about 10-15 minutes.
Fry the Bhajis:
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop spoonfuls of the onion mixture into the oil, frying in batches to avoid overcrowding.
Fry the bhajis for about 4-5 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Make the Coriander Dip:
In a blender or food processor, combine the chopped coriander, lime juice, ginger, garlic, salt, ground cumin, brown sugar, green chili, and coconut yogurt. Blend until smooth. Adjust seasoning to taste.
Serve:
Serve the crispy onion bhajis warm with the coriander dip on the side. Enjoy!
