Warm up with this hearty and flavorful Greek beef stifado, made easy in your Instant Pot! This dish is perfect for a cozy dinner and is sure to impress your family and friends. Here’s how to make it:
Ingredients:
2 lbs (900g) beef chuck, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
1 lb pearl onions or small shallots, peeled
4 garlic cloves, minced
2 tablespoons tomato paste
1 can (14 oz) crushed tomatoes
1/2 cup red wine vinegar
1/2 teaspoon ground cinnamon
1 teaspoon dried oregano
1/2 teaspoon allspice
1 bay leaf
2 cups beef broth
Salt and black pepper to taste
Fresh parsley for garnish
Instructions:
Sauté the Beef:
Set your Instant Pot to the "Sauté" function. Add the olive oil and let it heat up.
Season the beef cubes with salt and black pepper. Add them to the pot in batches, browning on all sides. Remove the browned beef and set aside.
Cook the Onions:
In the same pot, add the chopped onion and pearl onions (or shallots). Sauté for about 5 minutes until they start to soften.
Add the minced garlic and cook for an additional minute until fragrant.
Add the Remaining Ingredients:
Stir in the tomato paste, crushed tomatoes, red wine vinegar, ground cinnamon, dried oregano, allspice, bay leaf, and beef broth. Mix well.
Return the browned beef to the pot, ensuring it is submerged in the liquid.
Pressure Cook:
Close the lid of the Instant Pot and set it to "Manual" or "Pressure Cook" on high for 35 minutes.
Once the cooking time is complete, allow for a natural release for about 10 minutes, then carefully perform a quick release for any remaining pressure.
Serve:
Remove the bay leaf and taste the stifado, adjusting seasoning with salt and pepper as needed.
