Ingredients:
2 cups long grain rice
4 cups beef broth
1 tbsp olive oil
1 lb ground beef
½ cup chicken gizzards, minced (optional)
½ green bell pepper, minced
½ yellow onion, minced
2-3 cloves garlic, minced
1 tsp Cajun seasoning (or to taste)
Salt and pepper, to taste
1-2 green onions, chopped (for garnish)
Instructions:
Prepare the Ingredients:
Rinse the long grain rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.
Cook the Meat:
In a large pot or skillet, heat the olive oil over medium heat.
Add the ground beef and cook until browned, breaking it apart with a spoon. If using, add the minced chicken gizzards and cook until they are no longer pink.
Stir in the minced green bell pepper, yellow onion, and garlic. Cook until the vegetables are softened, about 5 minutes.
Add the Rice and Broth:
Stir in the rinsed rice and Cajun seasoning, mixing well to coat the rice with the flavors.
Pour in the beef broth and bring the mixture to a boil.
Simmer:
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid. Avoid lifting the lid during cooking to ensure even steaming.
Fluff and Serve:
Once the rice is cooked, remove it from heat and let it sit, covered, for an additional 5 minutes. Then, fluff the rice with a fork.
