📝 Ingredients:
For the Beef Stir-Fry:

1 lb (450g) beef steak, thinly sliced
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp cumin
½ tsp garlic powder
½ tsp chili flakes (optional)
½ onion, sliced
½ red bell pepper, sliced
½ green bell pepper, sliced
½ yellow bell pepper, sliced
1 tbsp soy sauce
For the Rice:

1 cup jasmine or basmati rice
2 cups water
Pinch of salt
For the Fresh Salad:

1 cup lettuce, chopped
½ tomato, diced
¼ cucumber, sliced
¼ red onion, finely diced
2 tbsp corn
1 tbsp olive oil
½ tbsp lemon juice
Pinch of salt & black pepper
🍽️ Instructions:
Cook the Rice:
Rinse the rice under cold water until the water runs clear. In a pot, combine the rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
Prepare the Beef Stir-Fry:
In a large skillet or wok, heat the olive oil over medium-high heat. Add the sliced beef and season with salt, black pepper, paprika, cumin, garlic powder, and chili flakes (if using). Stir-fry for about 3-4 minutes until the beef is browned.
Add the sliced onion and bell peppers to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp. Drizzle with soy sauce and mix well. Remove from heat.
Make the Fresh Salad:
In a bowl, combine the chopped lettuce, diced tomato, sliced cucumber, diced red onion, and corn. Drizzle with olive oil, lemon juice, and season with salt and black pepper. Toss to combine.
Serve:
