Shrimp Salad Pasta

Yields: 6 servings Prep time: 20 minutes Cook time: 15 minutes (mostly for the pasta)

Ingredients:

  • Pasta: 1 pound rotini or penne pasta (or any short pasta shape you prefer)
  • Shrimp: 1.5 pounds medium shrimp, peeled and deveined
  • Mayonnaise: 1 cup good quality mayonnaise (Hellmann's/Best Foods or Duke's are excellent choices)
  • Celery: 1 cup finely diced celery
  • Red Onion: ½ cup finely diced red onion
  • Bell Pepper: ½ cup finely diced red bell pepper (or any color you like!)
  • Fresh Dill: ¼ cup chopped fresh dill (or 1 tablespoon dried dill)
  • Lemon Juice: 2 tablespoons fresh lemon juice
  • Dijon Mustard: 1 tablespoon Dijon mustard
  • Garlic Powder: ½ teaspoon garlic powder
  • Old Bay Seasoning: ½ teaspoon Old Bay seasoning (optional, but adds great flavor)
  • Salt: To taste
  • Black Pepper: Freshly ground, to taste
  • Garnish (optional): Extra fresh dill, lemon wedges

Equipment:

  • Large pot
  • Colander
  • Large bowl
  • Small bowl

Instructions:

  1. Cook the Pasta: Fill a large pot with salted water and bring to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta in a colander and rinse with cold water to stop the cooking process. Set aside to drain completely.

  2. Cook the Shrimp: While the pasta is cooking, prepare the shrimp. There are a few ways to cook the shrimp:

    • Boiling: Bring a pot of water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Do not overcook! Immediately drain and rinse with cold water to stop the cooking process.
    • Sautéing: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until pink and opaque, about 2-3 minutes. Do not overcrowd the pan; cook in batches if necessary.
    • Steaming: Place a steamer basket in a pot with about an inch of water. Bring the water to a boil, then add the shrimp to the steamer basket. Cover and steam until the shrimp are pink and opaque, about 2-3 minutes. Once cooked, roughly chop the shrimp into bite-sized pieces.
  3. Make the Dressing: In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic powder, Old Bay seasoning (if using), salt, and pepper until smooth and well combined. Taste and adjust seasonings as needed. You might want a touch more lemon juice for brightness or a pinch more salt.

  4. Assemble the Salad: In the large bowl, combine the cooked and cooled pasta, chopped shrimp, diced celery, diced red onion, diced bell pepper, and chopped dill.

  5. Dress the Salad: Pour the dressing over the pasta mixture and gently toss to coat everything evenly. Be careful not to overmix, as it can make the salad mushy.

  6. Chill and Serve: Cover the bowl with plastic wrap or an airtight lid and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the salad to firm up slightly.

  7. Garnish and Serve: Before serving, give the salad a gentle toss. Garnish with extra fresh dill and lemon wedges, if desired. Serve chilled.

Chef's Notes & Tips:

  • Shrimp Quality: Use the freshest shrimp you can find. Frozen shrimp is perfectly acceptable, just make sure to thaw it completely before cooking. Look for shrimp that is firm, not slimy, and smells fresh (not overly fishy).
  • Don't Overcook the Shrimp: Overcooked shrimp is rubbery and tough. Cook just until pink and opaque.
  • Customize the Veggies: Feel free to add other vegetables that you enjoy, such as chopped cucumber, chopped tomatoes (seeded to prevent wateriness), or even some blanched green beans.
  • Spice it Up: Add a pinch of cayenne pepper or a dash of hot sauce to the dressing for a little heat.
  • Make it Ahead: This salad can be made up to a day ahead of time. Store it in an airtight container in the refrigerator.
  • Adjust the Dressing: Taste the salad after adding the dressing and adjust as needed. You might want more mayonnaise for a creamier salad or more lemon juice for a brighter flavor.
  • Add Avocado (Just Before Serving): Dice an avocado and gently fold it into the salad just before serving for extra creaminess and healthy fats. It doesn't keep well so don't add it if you're making the salad in advance.

Enjoy your delicious Shrimp Salad Pasta! Bon appétit!
