Forget all those separate pots and pans. We're talking rich, meaty Bolognese, perfectly cooked pasta, and a bubbling, cheesy crust, all crafted in one glorious vessel.

Yields: 6-8 servings Prep Time: 15 minutes Cook Time: 45-50 minutes

Ingredients:

  • The Foundation:

    • 1 tbsp olive oil
    • 1 large onion, finely chopped
    • 2 carrots, finely diced
    • 2 celery stalks, finely diced
    • 2 cloves garlic, minced
    • 1 lb ground beef (80/20 is ideal)
    • 1/2 lb Italian sausage, casings removed (sweet or mild)
    • 1 tsp dried oregano
    • 1/2 tsp dried basil
    • 1/4 tsp red pepper flakes (optional, for a little kick)
    • 1/4 cup tomato paste
    • 1 (28 oz) can crushed tomatoes
    • 1 (15 oz) can diced tomatoes, undrained
    • 1 cup beef broth (low sodium)
    • 1/2 cup dry red wine (optional, but adds depth)
    • 1 tsp sugar (balances acidity)
    • Salt and freshly ground black pepper to taste
  • The Pasta Power:

    • 1 lb pasta (penne, rigatoni, rotini, or similar shapes work best)
  • The Cheesy Crown:

    • 1 1/2 cups shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup fresh basil, chopped (for garnish)

Equipment:

  • Large oven-safe pot or Dutch oven (at least 6 quarts)

Instructions:

  1. Sauté the Aromatics: Heat the olive oil in your pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant. Don't skimp on this step; it builds the flavour base!

  2. Brown the Meats: Add the ground beef and sausage to the pot. Break them up with a spoon and cook until browned, draining any excess grease if necessary.

  3. Spice It Up: Stir in the oregano, basil, and red pepper flakes (if using). Cook for another minute, allowing the spices to bloom.

  4. Bolognese Base: Add the tomato paste and cook for 2 minutes, stirring constantly. This will caramelize the paste and add a deeper flavour. Pour in the crushed tomatoes, diced tomatoes, beef broth, red wine (if using), and sugar. Season generously with salt and pepper. Bring to a simmer.

  5. Pasta Power: Add the uncooked pasta to the pot. Make sure the pasta is mostly submerged in the sauce. If not, add a little more beef broth or water. Stir well to combine.

  6. Simmer and Cook: Bring the mixture back to a simmer, then cover the pot and reduce the heat to low. Cook for 15-20 minutes, or until the pasta is cooked through but still slightly al dente. Stir occasionally to prevent sticking. Check it often. You don’t want mushy pasta.

  7. Cheesy Glory: Preheat your oven to 375°F (190°C). Remove the pot from the stovetop. Stir the pasta and sauce one last time. Sprinkle the mozzarella and Parmesan cheese evenly over the top.

  8. Bake It!: Transfer the pot to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and lightly golden brown.

  9. Rest and Serve: Remove the pot from the oven and let it rest for 5-10 minutes before serving. This allows the cheese to set slightly and prevents it from being too runny.

  10. Garnish and Enjoy!: Sprinkle with fresh basil and serve immediately. A side salad goes perfectly with this dish.

Chef's Notes:

  • Meat Variations: Feel free to use all ground beef, ground turkey, or even ground lamb.
  • Vegetable Boost: Add other vegetables like chopped mushrooms, zucchini, or bell peppers to the sautéing stage.
  • Spice Level: Adjust the amount of red pepper flakes to your preference.
  • Make-Ahead: The Bolognese sauce can be made ahead of time and stored in the refrigerator for up to 3 days. Add the pasta and cheese just before baking.
  • Broth Substitution: If you don't have beef broth, you can use chicken broth or vegetable broth.
  • Cheese Variations: Use a blend of cheeses like provolone, fontina, or even a little bit of smoked gouda.
  • Don't Overcook the Pasta: You want the pasta to be slightly undercooked when you add it to the sauce because it will continue to cook in the oven.

This One Pot Bolognese Cheesy Pasta Bake is a guaranteed crowd-pleaser. Enjoy! Now go get cooking!
