Alright, listen up! We're going to get juicy, tender ribs on the table in under an hour. This isn't your all-day-smoking-over-pecan-wood kind of ribs, but trust me, these are damn good and perfect for a weeknight craving. We're using a pressure cooker and a quick broil for maximum flavor in minimal time.
Recipe: Lightning-Fast Ribs (Ready in Under an Hour!)
Serving Size: 2-3 people (depending on rib hunger!)
Prep Time: 10 minutes Cook Time: 35 minutes Broil Time: 5-7 minutes Total Time: 50-52 minutes
Ingredients:
- 2 lbs Baby Back Ribs or Spare Ribs (cut into sections of 3-4 ribs each - makes it easier to fit in the pressure cooker)
- Dry Rub:
- 2 tablespoons brown sugar (packed)
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (or more, to taste)
- Optional: Pinch of cayenne pepper for a little heat
- 1 cup Chicken Broth (low sodium)
- 1/2 cup Barbecue Sauce (your favorite!)
Equipment:
- Pressure Cooker (Instant Pot or similar)
- Baking Sheet
- Aluminum Foil (optional, for easier cleanup)
Instructions:
- Get Ready to Rumble: Trim any excess fat from the ribs. Pat the ribs dry with paper towels. This helps the rub adhere.
- Rub-a-Dub-Dub: In a small bowl, combine all the dry rub ingredients. Generously rub the mixture all over the ribs, ensuring they are completely coated. Press the rub in firmly.
- Pressure Cooker Prep: Pour the chicken broth into the pressure cooker. Place a trivet inside the pot. Arrange the rib sections on the trivet, being careful not to overcrowd. If necessary, stand them on their sides, leaning against each other.
- Pressure Cook! Secure the lid of the pressure cooker, ensuring the valve is set to sealing. Cook on high pressure for 22 minutes for baby back ribs or 25 minutes for spare ribs. Let the pressure release naturally for 10 minutes, then manually release any remaining pressure. This prevents the ribs from becoming too dry.
- Sauce It Up: Carefully remove the ribs from the pressure cooker. They will be very tender, so handle them gently. Discard the cooking liquid in the pressure cooker (it’s full of fat!).
- Broil Time: Preheat your broiler to high. Line a baking sheet with foil (optional for easier cleanup). Place the cooked ribs on the baking sheet.
- Baste & Broil: Brush the ribs generously with your favorite barbecue sauce. Place the baking sheet under the broiler for 3-4 minutes, or until the sauce is bubbly and slightly caramelized. Watch them carefully, as they can burn quickly!
- Flip & Repeat: Flip the ribs, brush with more barbecue sauce, and broil for another 3-4 minutes, until caramelized and slightly charred.
- Rest & Serve: Let the ribs rest for a few minutes before serving. This allows the juices to redistribute, making them even more flavorful. Serve with your favorite sides like coleslaw, potato salad, or grilled corn.
Chef's Notes & Tips:
- Spice Level: Adjust the chili powder and cayenne pepper in the rub to your preferred heat level.
- Trivet Alternative: If you don't have a trivet, you can create a bed of chopped onions and celery in the bottom of the pressure cooker to keep the ribs from sitting directly in the liquid.
- Sauce Variations: Experiment with different barbecue sauces. Memphis-style dry rub ribs are delicious without sauce, too.
- Don't Overcook: Pay close attention to the broiling time. You want a nice caramelization, not burnt ribs!
- Sides, Sides, Sides! While the ribs are resting or broiling, whip up some quick sides. A bag of pre-made coleslaw mix and a can of baked beans can be ready in minutes.
Enjoy your lightning-fast, flavor-packed ribs! This recipe proves that you don't need hours to get delicious, tender ribs on the table. Now go forth and conquer your rib cravings!
