    • 1 red bell pepper, finely diced (for extra red pop!)
  • "Ribbon" Garnish:

    • 1 red bell pepper, thinly sliced into long strips.
  • Dressing:

    • 1/4 cup extra virgin olive oil
    • 3 tablespoons balsamic vinegar
