    • 1/4 cup soy sauce (low sodium preferred)
    • 2 tablespoons oyster sauce
    • 1 tablespoon brown sugar (packed)
    • 1 tablespoon cornstarch
    • 1/4 cup beef broth (or water)
    • 1 teaspoon sesame oil
  • For the Stir-Fry:
    • 2 tablespoons vegetable oil (or peanut oil)
    • 1 medium yellow onion, sliced
    • 2 cloves garlic, minced
    • 1 head of broccoli, cut into florets
    • 1/4 cup water (for steaming the broccoli, if needed)
    • 2 green onions, chopped (for garnish)
    • Sesame seeds (for garnish)
    • Cooked white rice, for serving (optional)

Equipment:

  • Large bowl
  • Small bowl
  • Wok or large skillet
  • Cutting board
  • Knife

Instructions:

  1. Marinate the Beef: In the large bowl, combine the thinly sliced flank steak with all the marinade ingredients (soy sauce, cornstarch, cooking wine, ginger, garlic, sesame oil, and white pepper). Mix well to ensure the beef is evenly coated. Let it marinate for at least 15 minutes, or up to 30 minutes in the refrigerator. This helps tenderize the beef and infuse it with flavor.

  2. Prepare the Sauce: While the beef is marinating, whisk together all the sauce ingredients (soy sauce, oyster sauce, brown sugar, cornstarch, beef broth, and sesame oil) in the small bowl until smooth. Set aside.

  3. Prepare the Broccoli: Wash and cut the broccoli into even florets. You want them to cook consistently.

  4. Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in the wok or large skillet over high heat. Once the oil is shimmering and almost smoking (be careful not to actually smoke it!), add the marinated beef in a single layer, if possible. If not, work in batches to avoid overcrowding the pan. Stir-fry for 2-3 minutes, or until the beef is browned and cooked through. Remove the beef from the wok and set aside. Don't overcrowd, we want a good sear.

  5. Sauté Vegetables: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the sliced onion and minced garlic and stir-fry for about 1 minute, until fragrant and the onion is translucent.

  6. Cook Broccoli: Add the broccoli florets to the wok. Stir-fry for 2-3 minutes. If the broccoli starts to burn or needs a little help cooking through, add 1/4 cup of water to the wok, cover with a lid, and steam for 2-3 minutes, or until the broccoli is crisp-tender. Remove the lid and let any excess water evaporate.

  7. Combine and Finish: Return the cooked beef to the wok with the broccoli. Pour the prepared sauce over the beef and broccoli. Stir-fry for 1-2 minutes, or until the sauce has thickened and coats the beef and broccoli evenly.

  8. Garnish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve immediately over cooked white rice, if desired.
