🌽 Skillet Mexican Street Corn

Ingredients:

2 tablespoons salted butter
4 cups frozen corn
½ cup mayonnaise
½ cup sour cream
1 large lime (juiced)
1 teaspoon ground cumin
½ teaspoon black pepper
½ cup cotija cheese, crumbled
¼ cup fresh cilantro leaves, roughly chopped
Instructions:

Cook the Corn:
In a large skillet, melt the salted butter over medium heat. Add the frozen corn and cook, stirring occasionally, for about 5-7 minutes, or until the corn is heated through and slightly caramelized.
Prepare the Sauce:
In a bowl, combine the mayonnaise, sour cream, lime juice, ground cumin, and black pepper. Mix well until smooth.
Combine:
Once the corn is cooked, remove the skillet from heat. Pour the sauce over the corn and stir until the corn is well coated.
Add Cheese and Cilantro:
Gently fold in the crumbled cotija cheese and chopped cilantro, reserving a little for garnish.
Serve:
Transfer the skillet corn to a serving dish and garnish with additional cotija cheese and cilantro if desired. Serve warm and enjoy!
