Pan-Seared Mediterranean Cod in Tomato Basil Sauce

Ingredients:

For the Cod:
- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 tsp paprika

For the Tomato Basil Sauce:
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (14 oz) can crushed tomatoes
- 1/4 cup dry white wine (optional)
- 1 tsp dried oregano
- 1/2 tsp red chili flakes (optional for heat)
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
- 1/4 cup Kalamata olives, sliced (optional)
- 1 tbsp capers (optional)

Directions:

1. Prepare the cod: Use paper towels to pat the cod fillets dry. Season both sides with salt, pepper, and paprika.

2. Sear the cod: In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side until they are golden brown and cooked through. Once done, remove the fillets and set them aside.

3. Make the sauce: In the same skillet, add another 2 tbsp of olive oil. Sauté the chopped onion until it softens, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds.

4. Simmer the tomatoes: Stir in the crushed tomatoes, the optional white wine, oregano, and red chili flakes. Season with salt and pepper. Let the sauce simmer for 8-10 minutes, stirring occasionally.

5. Add final touches: Mix in the fresh basil, olives, and capers if using. Allow it to simmer for an additional 2 minutes.

6. Combine: Return the seared cod fillets to the skillet, spooning the sauce over the top. Let it warm through for 2-3 minutes.

7. Serve: Plate the cod with the delicious tomato basil sauce on top. This dish pairs wonderfully with rice, quinoa, or crusty bread.
