Ingredients:
For the Tart Crust:

1 ¾ cups flour
¾ teaspoon sea salt
1 ½ teaspoons sugar
½ cup butter, chilled and cubed
1 teaspoon vanilla extract
¼ cup + 2 tablespoons cold water
For the Custard Filling:

2 cups strawberries, sliced
1 cup vanilla yogurt
1 tablespoon honey
2 eggs
3 tablespoons sugar
1 teaspoon vanilla extract
For the Lemon Curd:

3 eggs
½ cup lemon juice
1 cup sugar
¼ cup lemon zest (about 2 lemons)
6 tablespoons unsalted butter, cubed
Pinch of coarse salt
Instructions:
1. Make the Tart Crust:
In a mixing bowl, combine the flour, sea salt, and sugar.
Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.
Stir in the vanilla extract and cold water, a little at a time, until the dough comes together.
Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Preheat the Oven:
Preheat your oven to 375°F (190°C).
3. Roll Out the Dough:
On a floured surface, roll out the chilled dough to fit your tart pans. Press the dough into the pans and trim any excess.
4. Blind Bake the Crusts:
Prick the bottom of the crusts with a fork and line with parchment paper. Fill with pie weights or dried beans.
Bake for 15-20 minutes, or until lightly golden. Remove the weights and parchment, and bake for an additional 5 minutes. Let cool.
5. Prepare the Custard Filling:
In a bowl, whisk together the vanilla yogurt, honey, eggs, sugar, and vanilla extract until smooth.
Pour the mixture into the cooled tart crusts and top with sliced strawberries.
6. Make the Lemon Curd:
In a saucepan, whisk together the eggs, lemon juice, sugar, lemon zest, and a pinch of salt over medium heat.
Cook, stirring constantly, until the mixture thickens (about 10 minutes). Remove from heat and stir in the cubed butter until melted and smooth.
7. Assemble the Tarts:
Pour the lemon curd over the custard-filled tarts, spreading it evenly.
Chill the tarts in the refrigerator for at least 2 hours before serving.
8. Serve:
