Honey Chipotle Chicken Rice Bowls

Ingredients:

2 chicken breasts, diced
1/4 cup honey
2 tbsp chipotle peppers in adobo sauce, minced
2 tbsp olive oil
3 cups cooked rice (white, brown, or jasmine)
1 red bell pepper, diced
1 cup corn kernels (fresh, frozen, or canned)
1 cup black beans, rinsed and drained
1 avocado, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Instructions:

Prepare the Chicken Marinade:
In a bowl, mix together the honey, minced chipotle peppers, olive oil, salt, and pepper. Add the diced chicken breasts and toss to coat. Let it marinate for at least 15-30 minutes (or longer in the refrigerator for more flavor).
Cook the Chicken:
Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes, or until the chicken is cooked through and no longer pink in the center. Stir occasionally to ensure even cooking.
Prepare the Rice Bowl:
In a large bowl, combine the cooked rice, diced red bell pepper, corn, black beans, and lime juice. Mix well to combine.
Assemble the Bowls:
Divide the rice mixture among serving bowls. Top each bowl with the cooked honey chipotle chicken, diced avocado, and chopped cilantro.
Serve:
