2 chicken breasts, diced

2 tbsp chipotle peppers in adobo sauce, minced
2 tbsp olive oil
3 cups cooked rice (white, brown, or jasmine)
1 red bell pepper, diced

1 avocado, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime

Instructions:

Prepare the Chicken Marinade:
