Creamy Shrimp Scampi with Pineapple and Garlic Sauce
Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 cup diced pineapple
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
Step 1: Sauté Shrimp
In a large skillet, heat olive oil over medium heat. Add shrimp and cook until pink, then remove them from the skillet and set aside.
Step 2: Sauté Garlic and Pineapple
In the same skillet, add butter and sauté garlic until fragrant. Add diced pineapple and cook until slightly caramelized.
Step 3: Make Creamy Sauce
Pour in the heavy cream, stir well, and let it simmer for a few minutes until slightly thickened.
Step 4: Combine Shrimp and Sauce
Return the cooked shrimp to the skillet. Stir to coat the shrimp with the creamy garlic and pineapple sauce. Season with salt and pepper.
Step 5: Serve
Garnish with fresh parsley and serve the creamy shrimp scampi over pasta or rice.
