Spicy Grilled Steak Rice Bowl with Chipotle Yogurt Sauce
Ingredients:
- 1 lb steak
- 1 cup cooked rice
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 1-2 tbsp chipotle peppers in adobo sauce
- 1 clove garlic, minced
- Juice of 1 lime
- Fresh cilantro for garnish
Directions:
Step 1: Marinate the Steak
In a bowl, season the steak with salt, pepper, and a drizzle of olive oil. Let it marinate for at least 30 minutes.
Step 2: Grill the Steak
Preheat your grill or grill pan over medium-high heat. Grill the steak to your desired doneness. Let it rest before slicing.
Step 3: Saute the Vegetables
In a pan, sauté the bell peppers and onions with olive oil until they are tender and slightly charred. Season with salt and pepper.
Step 4: Make the Chipotle Yogurt Sauce
In a blender, combine Greek yogurt, chipotle peppers, minced garlic, lime juice, salt, and pepper. Blend until smooth.
Step 5: Assemble the Bowl
Divide the rice among bowls, top with sliced steak, sautéed vegetables, and a drizzle of chipotle yogurt sauce. Garnish with fresh cilantro.
